1Wash spinach well and pat dry.
2Place spinach on Excalibur Dehydrator trays in a single layer. Be careful not to overlap the spinach leaves.
3Tip: Place a mesh polyscreen insert from one of your other Excalibur trays on top of the spinach leaves. This will help keep them from blowing around.
4Dehydrate the spinach at 125°F for 5-12 hours or until crisp and crumbly.
5Allow spinach to cool completely.
6Blend dried spinach in a high speed blender or coffee grinder until fine powder.
7Store powder in an airtight container.
