Lemon Cookie Recipe

  • Prep: 3 hrs
  • Dehydrate: 5 hrs


1 cup Cashews

3 tbsp Lemon Juice

1 cup unsweetened dried Coconut

1 tbsp Agave Nectar


1Process the cashews in a food processor until they resemble course flour

2Add the coconut and process again until very well mixed

3Add the lemon and the sweetener

4Process again until resembling dough (if it is a bit too wet add more coconut or if it is a bit dry add a tiny bit of water)

5Shape into cookies

6Dehydrate in your Excalibur Dehydrator for 8 hours at 110 degrees F
