2 cups Cashews
1/2 cup Lemon Juice
2 cups Unsweetened Dried Coconut
1/4 cup Agave Nectar
1/4 cup Lemon Zest
1Process the cashews in a food processor until they resemble course flour
2Add the coconut and process again until very well mixed
3Add the lemon juice, agave and 1/8 cup of the lemon zest
4Process again until resembling dough (if it is a bit too wet add more coconut or if it is a bit dry add a tiny bit of water)
5Shape into cookies by hand or roll dough out and cut out cookies with a cookie cutter.
6Gently press remaining lemon zest onto the top of the cookies.
7Dehydrate in your Excalibur Dehydrator at 105° degrees F for 8-12 hours or until dry but soft.
