1Cook skinned yams until tender.

2Put between two sheets of wax paper, use rolling pin to flatten, remove one sheet of wax paper, turn the other sheet onto the screen, take a pizza roller or a spatula and score into cubes.

3Put into Excalibur to dehydrate.

4I salted one sheet of yams to see how they would taste as chips. The others will be bagged and stored away to use as mashed potatoes later by reconstituting
