Salt & Vinegar Beet Chips

4 small-medium beets

1/2 cup apple cider vinegar

1/2 cup water

1 tbsp olive oil

salt to taste


1Wash beets well.

2Slice beets into 1/4" inch slicers. We recommend using a mandoline for even slices.

3Mix vinegar, water and oil in a bowl and soak the sliced beets in the mixture for 20 minutes.

4Drain beet slices and place them on Excalibur Dehydrator trays in an even layer. Make sure no slices are touching or overlapping.

5Sprinkle beets with salt.

6Dry at 125° F for 6-11 hours.
