Pumpkin Granola Bars

5 cups Rolled Oats

1 cup Pumpkin Seeds

1/2 cup Golden Raisins

1/2 cup Pecans

1/2 cup Almonds

1/4 cup Flax Seeds

1/4 cup Flaked Coconut

1/2 cup Organic Pumpkin Puree

1 1/2 cups Maple Syrup

2 tbsp Coconut Oil

1 tbsp Pumpkin Pie Spice

2 tsp Cinnamon

1 pinch Salt


1In a large bowl mix together your oats, pumpkin seeds, raisins, flax seeds, coconut, pecans, almonds, spices and salt. Stir.

2In a smaller bowl, combine your maple syrup, coconut oil & pumpkin puree.

3Whisk together until it is well combined.

4Pour mixture over oat mixture & stir until all pieces are well coated.

5Pour mixture onto ParaFlexx™ lined Excalibur Dehydrator tray. Pack it into a tight square layer no more than 1/2" thick.

6Score the granola with desired bar shape with a knife.

7Dry at 115 degrees F for 8-12 hours, flipping the tray halfway through the drying cycle. To flip: place a second empty tray face down on top of your tray containing the bars. Hold the edges of both trays tightly and flip them over. Remove the top tray, polyscreen and ParaFlexx™ sheet. Then place tray of granola back into dehydrator to finish drying.

8Once dry, break granola apart into bars. They should be dry, but chewy.
